Insta360 dominated 360 cameras for riding until GoPro launched the MAX2. Both shoot 8K and have replaceable lenses. The differences are battery, weight and ecosystem.

Highlighted in orange: the winner of each measurable spec. Manufacturer data.
Battery: the X5 wins
In 8K, the X5 claims around 88 minutes and the MAX2 around 66. On long rides, the Insta360 lasts longer.
Weight: the MAX2 wins
154 g for the GoPro against 200 g for the Insta360. On a helmet or a stick, less weight helps.
Water: the X5 wins
15 m without a case for the X5 and 5 m for the MAX2. For rain it makes no difference; for fords and washing the bike, the X5 is more reassuring.
Sound: advantage GoPro
The MAX2 has six microphones with wind-noise reduction, a plus if you like recording the engine or talking to camera.
Accessories: depends on what you already own
Insta360 has the invisible stick and the best-known 360 motorcycle mounts. GoPro has the biggest range of mounts overall. If you already own mounts from one brand, that is a good reason to stay with it.
